WHY WE LOVE THIS

It is cripsy. cheesy, and just perfect

Delicious pizza made with fathead dough and sliced pepperoni on top. This is not only Keto, but also gluten-free pizza, made with mozzarella cheese, cream cheese, egg, and almond flour.

It tastes just like the real classic pizza, but it also has a crispy crust.

The first version I made was without seasoning in the crust. I really could taste the almond flour in it. So, I made the version with Garlic and Herb seasoning and it was just perfect. Besides this seasoning, you can try others, like classic basil or oregano.

This pizza can be made with coconut flour too. Use 40g of coconut flour instead of almond flour if you want to try it.

The dough for the pizza is so easy to make, but you will have to roll it out immediately. If the dough becomes too tough to work with, just heat it a bit in the microwave.

As with any fathead dough use the mozzarella cheese in the log, not the mozzarella meant for salads. Those are packed in brine.

Ingredients

  • 170 g shredded mozzarella + extra for topping
  • 75 g fine almond flour
  • 1 egg
  • 30 g cream cheese
  • 80 g pepperoni, sliced
  • 1 tsp garlic and herb seasoning

Instructions

  • Gather your ingredients.
  • In a microwave safe bowl, combine mozzarella and cream cheese.
  • Microwave the cheese until melted. Give it a good stir and add egg and half the seasoning.
  • Add almond flour.
  • Stir until the dough comes together.
  • Roll out the dough to 3mm thick.
  • Spread over tomato sauce. Top pizza with ppperoni and cheese. Sprinkle over remaining seasoning
  • Bake the pizza for 6 minutes at 200C. You can use pizza stone or baking sheet lined with parchment paper. Remove the pizza and poke any bubbles that may appear. Continue baking for another 3-4 minutes. Serve pizza warm.
