Delicious breakfast or on-the-go lunch option for all who are craving something delicious and hot!

The Hot pockets are filled with delicious scrambled eggs, mushrooms, and crispy bacon. I added scrambled eggs for a more nutritious aspect, but you can skip these. Instead of the eggs you can add more mushrooms or use slices of cheese.

The Hot pockets are perfectly packed with all you need; protein, fats, and are on the low-carb side. The Hot pockets will stay fresh for the whole day and that is their beauty. You can make these ahead and enjoy them throughout the day.

Speaking about spices and spicing the dish, you can use plain salt and pepper, but you can choose a variety of our spices. I recommend All-purpose seasoning or some Spicy Mexican seasoning to make the hot pockets with a spicy kick.

Ingredients

  • 85 g grated mozzarella cheese
  • 35 g fine almond flour
  • 2 slices bacon
  • 2 tbsp butter
  • 2 scrambled eggs
  • 6 mushrooms, sliced

Instructions

  • Gather your ingredients.
  • Cook bacon in a skillet until crispy. Remove the bacon and reserve bacon fat.
  • Slice the mushrooms.
  • Cook the mushrooms, for 5-6 minutes in the bacon fat.
  • In a microwave safe bowl, combine mozzarella with butter.
  • Microwave the cheese in 30-second intervals until the cheese is melted. Give it a good stir and add almond flour. Knead until you have a smooth dough.
  • Divide the dough and roll out very thin, as thin as you possibly can. Place the bacon on the center of the dough. Top the bacon with scrambled eggs and mushrooms.
  • Fold the sides, short ones first, then longer. Place the hot pockets, seam side down on a paper lined baking sheet.
  • Bake the hot pockets 15-20 minutes at 180C. Serve warm.
