This salad recipe is a perfect complement for anyone on a keto diet, but also those who are looking for something fresh and tasty. The salad is perfect for picnic or family gatherings.

The chicken in this salad is cut into bite-size pieses, as well aso avocado so both are very noticable. You can shred your chicken if you like but this version is much easier to prepare.

Chicken Avocado Salad

This Avocado Chicken Salad Recipe is the perfect combination of creamy and light. It's satisfying but not heavy, which makes it a great lunch or dinner option!

Ingredients

  • 350 g cooked chicken
  • 2 avocados
  • 1 tsp lime juice (freshly squeezed)
  • 2 spring onions (chopped)

For the dessing:

  • 3 tsp mayonnaise
  • 2 tsp lime juice (freshly squeezed)
  • 10 g parsley (chopped)
  • salt & pepper (to taste)

Instructions

  • Start by gathering and preparing your ingredients.
  • Peel, pit, and chop avocado in small or bite-size pieces. It is up to you.
  • In a bowl, combine avocado with lime juice. Add chicken and spring onions.
  • In a bowl, combine mayonnaise and lime juice. Whisk until smooth.
  • Add parsley and dressing over a salad.
  • Give a salad a good stir. Chill it for 30 minutes and serve.

Notes

Which chicken to use?
For this recipe you can use any chicken part; breasts, skinned and thighs or legs. It doesn’t matter if you use cooked, grilled or rotisserie chicken. If you have some chicken leftovers you can use those for this salad.
How to make the creamy dressing?
This is a very simple dressing made with mayonnaise and lime juice. If you want, you can add 1-2 tablespoons of Greek yogurt or some spices. Chili or spicy Mexican seasoning will pair perfectly with this salad. You can make the salad in advance and just drizzle the dressing before serving. You don’t need to worry about the avocado turning brown because it is covered with lime juice.

You can serve this chicken as it is, but you can add some crunch by adding chopped walnuts, almonds, or hazelnuts. For extra flavor make sure your nuts are toasted or simply use pre-packed Salt and vinegar almonds.
